Smoky maple Swiss Chard

Smoky, sweet, salty, crunchy super greens. This is one of my favorite recipes, and one that I could eat by itself as an entire meal. Never mind, chard is like a work of art! I've never seen such a beautiful vegetable. Check out this recipe, neighbors!

  • 1 bunch swiss chard sliced in 1 inch pieces/ribbons, stems separated from the leaves

  • 3 cloves garlic smashed, peeled, minced

  • 2 tbsp extra virgin olive oil

  • 1 tsp smoked paprika

  • 2 tbsp maple syrup

  • 1 tbsp white wine vinegar

  • Salt and pepper

  • Pinch of cayenne if you want a kick

Sauté chard stems with olive oil and a pinch of salt for 3 minutes over medium. Add minced garlic and cook another 2 minutes. Stir in smoked paprika. Add chard leaves, 1/4 cup water and freshly ground pepper. Cover and let steam for 4-5 minutes. Uncover. Add maple syrup, and a splash of white wine vinegar. I also added a pinch of cayenne for a kick. Taste and adjust. Enjoy as a side, over rice, or simply by itself!
